I was recently invited to present in the One Health Microbiome Seminar Series at Penn State (02.20.2026), where I shared my research on diet–microbiome interactions and their role in inflammation and colitis. Our recent work was published in The Journal of Nutrition. This study explored how different diets and fiber supplementation shape metabolism, liver health, and the gut microbiome. Had a one-of-a-kind experience volunteering at Haunted-U, an exciting Halloween-themed event organized by the Office of Science Outreach at Penn State.
