My doctoral research explored how asparagus fermentation by the gut microbiome generates metabolites that protect epithelial cells and reduce inflammation. Despite its high sulfur content, asparagus proved beneficial due to its unique polyphenolic profile. I am now expanding this work using in vivo models and multi-omics approaches to pinpoint the microbial processes and metabolites driving these effects.
